Earlier this week, about a half-dozen chefs did demos at the City Harvest Summer in the City event, and we were able to catch a couple on video. We showed you how Leah Cohen makes scallops, but the weekend calls for something a little dirtier: sliders. Alexandra Guarnaschelli doesnt have them on her own menu at Butter, but her slider philosophy is beyond reproach: Sliders should have so much stuff in them that gives them moisture and texture that they almost fall apart.
