If that recent glimpse inside Per Se’s kitchen failed to sate you, New Orleans chef Scott Boswell is staging with Jonathan Benno for a week and blogging his experience. As we’ve noted, one of the key elements of kitchen drama is when the chef dumps all of your hard work in the garbage, and that happens here right off the bat. But there are highs, too, such as when Boswell gets to unpack and break down some live Scottish langoustines. And family meal — “the best enchiladas I have ever eaten.”
