Graydon Carter has named Larry Forgione, called by some the “godfather of American cuisine,” supervising executive chef at Monkey Bar. The restaurant’s retro food — from clams casino to lobster Newburg — had been generally panned by critics, and British chef Elliot Ketley is now out.
