Jack and the Bean Bowl, a vegetarian Mexican food cart, starts serving today in Copley Square, says Boston Restaurant Talk. The cart offers Italian sodas, frosted-to-order cupcakes, and bean bowls, which are essentially burrito bowls: black beans, brown rice, avocado, cheddar cheese, salsa, sour cream, and cilantro, with a choice of lemon or chipotle-lime sauces. Between Copley Square’s farmers’ market, the assortment of punk teens, and the Food Not Bombs table, a vegetarian food cart should do quite well.
