The Spotted Pig’s Breslin might not be the only eatery coming to the Ace Hotel. We’ve heard that the team behind Brooklyn’s No. 7 is in conversations to open a sub shop in a storefront in the hotel’s building, and Matt Suchomski confirms that he and his partner, Perry St alum Tyler Kord, are trying to “figure out how to make things work.” Suchomski tells us, “Tyler and I have always had a dream of having a sandwich shop because we love them so much.” Rest assured, he isn’t thinking Boar’s Head — these will be “classic subs with righteous ingredients,” and Suchomski plans on “taking it back to basics and doing something in the same vein as when Danny Meyer looked at a Wendy’s hamburger and said, ‘Let’s make that right.’” That means they’ll source from local farms, cure salami, make their own brisket and roast beef, bake bread, and even make their own sodas. Adding to all this, Matthew Maddy (also a partner in No. 7 as well as a partner in Weather Up) is in discussions to bring Weather Up cocktails to what could be an adjacent bar in the building. Here’s hoping it all works out!
