Oyster farmer Michael Osinski writes in the magazine this week about his previous career as a software developer. I wrote the software that turned mortgages into bonds, he says, but gave up that work eight years ago. Now, he sells about 3,000 oysters a week to restaurants like Esca, Le Bernardin, and Gramercy Tavern. Videographer Jonah Green spent a day on the water with Osinski last week.
