After introducing its menu d’economie, Picholine is going one step further and making a $58 three-course tasting menu available in its dining room from Monday through Thursday, 5 p.m. to 10 p.m. Sample dishes: Borscht Soup and a Goat Cheese Tuille; Maine Lobster with Vanilla Fried Milk; and Steamed Black Sea Bass served with Celery Root Purée, Celery Leaf Tempura, Pistachio Crumble, and Grade Chutney.
