Do Cookbooks Do Their Restaurants Justice?

What happens when you compare recipes from the Shopsin’s, Carmine’s, and Chanterelle cookbooks to the real-deal dishes at the restaurants? The slutty pancakes come with pistachios and grade-A syrup at Shopsin’s, yet there’s no mention of them in the book. And, compared to the cookbook version, the linguine and white clam sauce at Carmine’s “used significantly more garlic, thickly sliced, not coarsely chopped as in the recipe, and featured both whole littlenecks and chopped cherrystone clams.” And that’s not even getting into the troubles of trying to reproduce an Achatz/Keller feast
