Florence Fabricant brings the curious news that the new Mondrian Chinatown has tapped Sam Talbot to head its chichi seafood restaurant when it opens late next year, even though the latest buzz ties Talbot to his own venture. But Flo Fab has doubts that Talbot will stick with the project, adding that it's "a long way away, and faithful watchers of Mr. Talbot will recall that he was also supposed to be the chef at Spitzers on the Lower East Side [and] never cooked at Spitzers."
