A quick-thinking waiter at BarBao brings out strawberry sorbet to soothe burning taste buds of guests who confuse red chiles in the Vietnamese dishes for sweet peppers and pop them whole. The sorbet is a good tip, but the server could also warn diners when the spiced-up plates arrive that the chiles are not mild peppers that you should eat; chewing a chile can resurface your tongue.
