Michael White of Convivio is the latest chef to pooh-pooh cooking-school grads: “If I took ten guys, ten girls out of cooking school, brought them into the kitchen and told them, ‘Here’s an artichoke, clean it,’ I bet you six or seven wouldn’t know how to do it. People say, ‘Oh, I just made this great chicken.’ I say, ‘Okay, do it 10,000 times now. After you do it 10,000 times you’re really going to be good at it.’” [ABC News]
