When we spoke with Gilt chef Chris Lee about taking over at Aureole, we didn’t bother inquiring about Tony Aiazzi, the chef he’s replacing. It seems Aiazzi had a bet going with his publicist that indeed no one would ask about his plans, but Bret Thorn has done just that: “Turns out he’s going to be taking some time off and traveling. He said he hopes to check out North African cuisine, as it has always interested him. He also expressed [an] interest in getting back to Paris.” Bon voyage, Monsieur Aiazzi!
