Country’s Willis Loughhead Moves to Table 8 and Cooper Square Hotel

The Cooper Square Hotel has picked Countrys former chef de cuisine, Willis Loughhead, to be its executive chef and the chef de cuisine at Govind Armstrongs restaurant, Table 8. When he took over at Country last spring, Loughhead told us his style was characterized by a lot of olive oil, vinegar, fresh lemon a lot of brightness. Regarding his new gig running Govind Armstrongs kitchen, he tells the Feedbag, Were both very motivated towards seasonal stuff, into curing everything in house, alternative cures for seafood, and all kinds of new marination techniques.
