Adour’s Tony Esnault Replaced by Chicago Chef, Django Replaced by Chicago Restaurant

More haute-dining musical chairs today: Florence Fabricant confirms earlier rumors that Tony Esnault, the executive chef of Adour Alain Ducasse, will be replaced by Joel Dennis, a chef de cuisine at Chicago’s highly lauded Tru. Ducasse tells Fabricant that Esnault will stay with the company in some capacity, and that he’s “excited about having an American in charge of the kitchen.” Of course, we saw Esnault’s departure coming back in August, though the installment of a Chicago chef is an interesting twist. With this as well as the opening of Chitown import Vermilion tomorrow in the old Django space, the Windy City is increasing its footprint.
