We’ve just heard that Murray’s Real Salami will open mid next week — they’re thinking Wednesday, though they may open a little sooner or later. In the meantime, you can now browse the bulk of the inventory online. Highlights: Barolo sausage, soppressata, and black-truffle Salami Tartufo from Creminelli, a hit at the Fancy Food Show and one of the brands that Murray’s will carry exclusively. Holiday must: ham from Vermont Smoke & Cure — it’s cured with local corn cobs, maple wood, and maple syrup. And of course you’ve got your venison pâté, lardo, Fabriques Delices duck fat and rabbit pâté, and so on. And in other salami/salumi news, Gael Greene brings word that Cesare Cassella’s is poised to open November 6.
