So here’s the nitty-gritty on Colicchio’s new project, officially titled Tom: Tuesday Dinner. As we told you before, he’ll be cooking in the open kitchen of Craft’s private dining room every other Tuesday, from 6:30 p.m. onward. Our reporter, Alexandra Vallis, now relays these details: He’ll be preparing the seven- to eight-course menu, priced from $150-$250, with the help of four cooks and the occasional prestigious drop-in. The “restaurant,” which opens October 14 and will have 32 seats (all of them two- and four-tops), has been two years in the making, and almost opened last year but was scrapped.
“I’ve been wanting to do a tiny, small place where you have your hand in everything,” Colicchio said today. In fact, he’s so excited about it that he’s planning to launch a Website, tomtuesdaydinner.com, where photos of each dish will be posted after the meal. One of them he’s been playing with: Squab with honey-glazed onions, licorice root, and black fermented garlic. The reservation number, again, is 212-400-6495. Reservations open six weeks in advance, and as of this posting, the following dates were available: October 14, October 28, and November 11.
