Andrew Carmellini, late of A Voce, will open a small, rustic Italian-pasta restaurant in New York later this year. The chef has no location or timeline yet, he says. “I’d like to open it tomorrow,” he says from Seattle, where he's shopping for spits and wood ovens. “But there are all those New York hassles to deal with — leases, liquor licenses, and so on. It’ll probably happen later this year.” Carmellini also wants to open an Italian restaurant in Las Vegas, but those plans are undefined and likely at least a year away. “I want to get my little pasta restaurant done first,” he says.
